  • 500 g butternut squash (peeled and chopped)
  • 3 sprigs rosemary (finely chopped)
  • 4 cloves garlic (peeled)
  • 1 yellow onion (finely sliced)
  • 2 tbsp olive oil
  • 500 g shelf-stable gnocchi
  • 50 g parmesan (grated)
  • Juice of 1 lemon
  • 30 g walnuts (roughly chopped)
  • 75 ml milk
  • 50 g turkey strips or chicken strips (chopped)
  • 1 ball of fresh mozzarella (torn into pieces)

Instructions

  1. Preheat your oven to 180ºC.
  2. On a baking tray, combine butternut squash, onion, garlic, rosemary, and olive oil. Roast for about 30 minutes until golden.
  3. Blend roasted vegetables into a smooth purée, adding water if necessary.
  4. In a frying pan, heat olive oil and cook turkey strips until crispy.
  5. Stir in the purée with water and milk; add gnocchi and simmer for about 8-10 minutes.
  6. Mix in parmesan cheese and lemon juice; fold in half of the turkey strips.
  7. Top with mozzarella pieces and broil until melted.
  8. Garnish with remaining turkey strips, walnuts, and serve hot.
