  • 3 medium shallots (halved and thinly sliced)
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear (peeled and diced)
  • 1 lemon (zested and juiced)
  • ½ cup chopped parsley
  • Freshly ground black pepper (to taste)

Instructions

  1. Peel, slice, and dice the pear. Toss it with lemon juice to prevent browning.
  2. Heat a skillet over medium heat, add turkey strips, and cook until golden brown. Set aside with some fat in the pan.
  3. Add shallots to the skillet and sauté until softened. Stir in Dijon mustard.

  5. Fold in half of the turkey strips and parsley, seasoning with black pepper.
  6. Serve in a bowl topped with remaining turkey strips and lemon zest.
