  • 28 oz bag Ore-Ida Potatoes O'Brien
  • 3 tablespoons olive oil
  • 1 pound ground turkey (93% lean)
  • 1 1/2 teaspoons dried oregano
  • 1/21 teaspoon chipotle chili powder
  • 1 teaspoon garlic powder
  • 8 large eggs
  • 1 cup cheddar cheese

Instructions

  1. Preheat oven to 425°F (220°C). Spread frozen Potatoes O'Brien on a sheet pan, drizzle with olive oil, toss well, and bake for 35 minutes until golden brown.
  2. In a skillet over medium heat, cook ground turkey until browned and excess liquid evaporates. Stir in oregano, chipotle chili powder, garlic powder, salt, and water. Cook for another minute.
  3. Whisk eggs in a bowl and season with salt and pepper. Cook in the same skillet until fluffy.
  4. Divide potatoes, turkey mixture, and scrambled eggs into meal prep containers. Top with shredded cheddar cheese.
