  • 1 pound ground turkey
  • 1 onion, diced
  • 2 teaspoons cumin
  • 2 cups water (for rice)
  • 1 cup long grain rice
  • Romaine lettuce, chopped
  • Canned corn
  • Canned black beans
  • Avocado slices
  • Cilantro
  • Green onions

Instructions

  1. In a large skillet over medium heat, cook the ground turkey until browned. Add diced onion and minced garlic; sauté until softened. Stir in spices (garlic powder, cumin, chili powder, paprika, salt, oregano) until well combined.
  2. Pour in tomato sauce and water; let simmer for about 10 minutes until thickened.
  3. For the rice: In a pot, boil 2 cups of water. Add rice and salt; cover and reduce heat to low for about 18 minutes until cooked. Stir in vegan butter, cilantro, and lime juice once done.
  4. To assemble: Start with a base of cilantro lime rice in each bowl. Top with turkey filling, then add chopped romaine lettuce, corn, black beans, avocado slices, green onions, and any other desired toppings.
