  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1 can (8 oz) crushed pineapple in juice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. In a bowl, mix pineapple juice, brown sugar, soy sauce, crushed pineapple, minced garlic, ground ginger, salt, and pepper.
  3. Pour the sauce over the chicken.
  4. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours until tender.
  5. Remove chicken; whisk cornstarch with water to create a slurry.
  6. Stir slurry into sauce and cook for an additional 10-15 minutes until thickened.
  7. Return chicken to slow cooker, shred or serve whole over rice or noodles.
