  • 1/2 cup Unsalted Butter (room temperature)
  • 1 cup All-Purpose Flour
  • 1/4 cup Powdered Sugar
  • 1/2 cup Lemon Juice (23 lemons)
  • 1 tbsp Lemon Zest (finely grated)
  • 3 Large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup All-Purpose Flour (sifted)
  • Powdered Sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together room temperature butter and powdered sugar until light and fluffy. Gradually mix in 1 cup flour until combined.
  3. Press the mixture into the bottom of an 8" x 8" baking pan and bake for 15 minutes until lightly golden.
  4. While the crust is baking, whisk together eggs, granulated sugar, lemon juice, lemon zest, and sifted flour until smooth.
  5. Pour the filling over the baked crust and return to the oven for another 30-35 minutes until set but slightly jiggly in the center.
  6. Allow to cool completely before dusting with powdered sugar and slicing into squares.
