  • 8.5 oz jar sun-dried tomatoes in oil
  • 1/3 cup fresh basil
  • 10 oz cherry tomatoes
  • 8 oz mozzarella pearls
  • ½ cup shredded Parmesan cheese
  • â…“ cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar

Instructions

  1. Cook the short pasta in salted boiling water until al dente. Drain and toss with baby spinach to wilt.
  2. In a mixing bowl, combine cooled pasta with chopped basil, diced red onion, sun-dried tomatoes, halved cherry tomatoes, shredded Parmesan, and mozzarella.
  3. Whisk together olive oil, reserved oil from sun-dried tomatoes, balsamic vinegar, minced garlic, Italian seasoning, salt, and pepper in a separate bowl.
  4. Pour dressing over the salad mixture and toss well. Chill for 30 minutes before serving.
