  • 2 tablespoons unsalted butter
  • 3 tablespoons chopped fresh sage
  • 3 cups fresh spinach leaves

  • 1/2 cup cranberry sauce
  • 6 ounces crumbled goat cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the filling by sautéing the onion in butter until translucent. Add garlic, then stir in sage and spinach until wilted.
  2. In a bowl, combine the sautéed mixture with cranberry sauce and goat cheese.
  3. Butterfly the beef tenderloin, season inside with salt and pepper, then fill generously with the mixture and roll tightly. Secure with kitchen twine or toothpicks.
