1.5 lbs ground beef
6 flour tortillas
5–6 ears of corn
3/4 cup mayonnaise
3/4 cup sour cream
1/2 cup pickled jalapenos
3/4 cup cilantro leaves (large stems removed)
2 tablespoons juice from pickled jalapenos
1 heaping tablespoon dry ranch seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 tablespoon lime juice, fresh
1 garlic clove, minced
1 lime, juiced and zested
1/3 cup sliced scallions
1/3 cup grated cojita cheese
1/4 cup cilantro, minced (large stems removed)
1 jalapeno, diced
1/2–1 tsp chili powder
1/2–1 tsp Tajin
1/4 tsp salt
2 tablespoons olive oil
Instructions
Begin by preparing the creamy jalapeno ranch sauce. Combine cilantro, pickled jalapenos, their juice, mayonnaise, sour cream, ranch seasoning, garlic powder, salt, and lime juice in a bowl. Whisk until smooth.
For the street corn topping, sauté corn in olive oil until tender and slightly charred. Mix in mayonnaise, garlic, lime juice and zest, scallions, cheese, cilantro, diced jalapeno, chili powder, Tajin, and salt.
Preheat a skillet over high heat for the burgers. Form beef into thin patties and season with salt and pepper. Cook for about 3 minutes on each side until they develop a crust.
Assemble your tacos by placing a burger patty on each tortilla and topping it with street corn mixture and jalapeno ranch sauce.
