  • 1/3 cup low sodium soy sauce
  • 1/3 cup low sodium chicken stock
  • 1/3 cup hoisin sauce
  • 1/2 cup brown sugar
  • 1 tablespoon minced fresh garlic
  • 2 teaspoons cornstarch
  • 1 tablespoon olive oil
  • 8 boneless, skinless chicken thighs (cut into 1-inch cubes)
  • 1 cup diced pineapple
  • 1/2 cup roasted, salted cashews (optional)

Instructions

  1. In a medium saucepan, whisk together pineapple juice, soy sauce, chicken stock, hoisin sauce, brown sugar, garlic, and cornstarch. Bring to a boil and reduce until syrupy (about 10 minutes). Set aside.
  2. Heat olive oil in a nonstick skillet over medium-high heat. Add chicken cubes, season with salt and pepper, and cook until no longer pink (about 5 minutes). Drain excess liquid.
  3. Pour the prepared sauce over the chicken and stir until well combined. Add diced pineapple and cook for an additional minute.
  4. Serve hot over rice or in a hollowed-out pineapple for an exotic touch.
