  • 2 small heads of broccoli, chopped
  • 3 large chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • ½ cup soy sauce
  • ½ cup honey
  • ¼ cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tbsp sriracha (optional)
  • 2 tsp arrowroot powder + 2 tbsp water (for thickening)
  • ½ cup mayonnaise (for spicy mayo)
  • 1 tbsp sriracha (for spicy mayo)
  • 23 tbsp water (for spicy mayo)
  • Sesame seeds (for garnish)

Instructions

  1. Cook rice according to package instructions.
  2. In a bowl, combine chicken with olive oil, salt, pepper, chili powder, smoked paprika, onion powder, and oregano. Toss well.
  3. Cook seasoned chicken in an air fryer at 380°F for 15-20 minutes until cooked through.
  4. Prepare the sauce by mixing soy sauce, honey, rice vinegar, garlic, sriracha, and arrowroot slurry.
  5. Steam or sauté broccoli until bright green and crisp.
  6. Layer cooked rice in bowls; top with chicken and broccoli. Drizzle with sticky sauce and garnish with sesame seeds.
