  • 2 eggs
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese
  • 2 tablespoons granulated sugar
  • 1 tablespoon flour
  • 1 teaspoon milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In one bowl, whisk together the dry ingredients: flour, granulated sugar, brown sugar, baking soda, and pumpkin spice.
  3. In another bowl, mix the wet ingredients: pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
  4. Combine the wet mixture into the dry mixture gently until just combined.
  5. In a separate small bowl, beat together cream cheese with granulated sugar, flour, milk, and vanilla until smooth.
  6. Spoon half of the pumpkin batter into each muffin cup. Add about one tablespoon of cream cheese filling on top and cover with remaining pumpkin batter.
  7. Bake for 25 minutes or until a toothpick comes out clean. Allow cooling before transferring to a wire rack.
