  • 1 box (13.25 oz) vanilla cake mix
  • ⅓ cup neutral oil (vegetable, avocado, canola)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 12 oz candy melts
  • Sprinkles or nonpareils for decoration

Instructions

  1. Preheat oven to 325-350°F (162-175°C) according to cake mix instructions.
  2. In a bowl, mix together cake mix, oil, milk or water, and eggs until well blended. Pour into greased baking pan and bake until a toothpick comes out clean.
  3. Let the cake cool slightly before crumbling it into a large mixing bowl.
  4. Prepare buttercream by mixing softened butter, powdered sugar, vanilla, salt, and milk until smooth. Combine with crumbled cake.
  5. Roll mixture into balls (about 30g each) and chill in the freezer for 15 minutes.
  6. Dip lollipop sticks into melted candy melts and insert halfway into each chilled ball.
  7. Dip each pop into melted candy melts until fully coated, then let excess drip off.
  8. Quickly decorate with sprinkles before the coating sets. Allow to dry upright.
