  • 3 TBSP all-purpose flour
  • 12 ounces evaporated milk
  • 1 tsp onion powder
  • 2 tsp minced garlic
  • 8 ounces shredded mozzarella cheese
  • 4 ounces shredded Monterey Jack cheese
  • 2 ounces shredded Parmesan cheese
  • 10 ounces frozen chopped spinach (thawed)
  • 12 ounces marinated artichoke hearts
  • 16 ounces Casarecce pasta

Instructions

  1. Make the roux by melting butter in a cast iron pan over medium heat, then whisk in flour until golden brown.
  2. Boil a large pot of salted water; cook pasta until just under al dente. Reserve one cup of cooking liquid before draining.
  3. Stir evaporated milk into the roux to create a smooth sauce, adding seasonings to taste.
  4. Mix in shredded cheeses until melted, then fold in spinach and artichokes.
  5. Combine cooked pasta with the cheese sauce; add reserved pasta water if needed for consistency.
  6. Top with additional cheese and broil until bubbly and golden.
