  • 1.5 cups sushi rice
  • 2 cups water
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon sesame oil
  • 1 pound sushi-grade ahi tuna, finely chopped
  • 3 tablespoons kewpie mayonnaise
  • 2 tablespoons Sriracha
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • 12 teaspoons lime juice
  • Avocado slices
  • Toasted sesame seeds
  • Chives or scallions, minced
  • Jalapeño or serrano pepper, sliced

Instructions

  1. Rinse sushi rice under cold water until clear, then cook with water and salt in a saucepan for about 15 minutes. Allow to cool.
  2. Mix rice vinegar, sugar, and sesame oil; fold into cooled rice until well combined.
  3. Prepare the spicy tuna by mixing chopped ahi tuna, kewpie mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice in a bowl.
  4. Press cooled rice into a lined baking sheet; cut into squares and top with spicy tuna mixture.
  5. Garnish with avocado slices and serve.
