  • 1 small spaghetti squash (30 ounces)
  • Olive oil
  • Salt and black pepper
  • Zucchini
  • Bell pepper
  • Red onion
  • Dried oregano
  • Ground cumin
  • Black beans
  • Corn kernels
  • Salsa
  • Shredded cheese

Instructions

  1. Preheat oven to 425°F.
  2. Carefully stab the spaghetti squash several times and microwave for 4-5 minutes. Cut in half and scoop out seeds.
  3. Rub each half with olive oil, season with salt and pepper, and roast on a baking sheet for 30-45 minutes until fork-tender.
  4. While the squash cooks, heat olive oil in a skillet over medium heat. Sauté diced onion, zucchini, bell pepper, oregano, cumin, salt, and pepper until softened.
  5. Stir in black beans, corn, salsa, and some spaghetti strands from the squash.
  6. Fill each squash half with the mixture, top with remaining cheese, and bake at 350°F for about 10 minutes until heated through.
  7. Broil for an additional 1-2 minutes until cheese is bubbly.
