  • 325g warm water
  • 25g honey
  • 20g avocado oil
  • 500g high-protein white bread flour
  • 10g salt
  • 78g melted butter (for filling)
  • 2 tablespoons cinnamon
  • 99g sugar (brown or cane)
  • 150g dried raisins (optional)

Instructions

  1. Prepare an active sourdough starter that passes the float test.
  2. In a large bowl, combine warm water, starter, avocado oil, and honey; whisk until well mixed.
  3. Gradually add high-protein bread flour to form a shaggy dough.
  4. Let the dough rest for one hour (autolyse).
  5. Sprinkle in salt and knead gently; let rest for another 30 minutes.
  6. Perform stretch and fold techniques every 30 minutes until ready.
  7. Roll out the dough, spread melted butter, and sprinkle with cinnamon sugar and raisins before rolling up tightly.
  8. Cut into rolls, place in a greased pan, and let rise until doubled in size.
  9. Bake at 350°F (175°C) until golden brown, then cool slightly before icing.
