  • 12 tbsp unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 tbsp lemon zest
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 tsp lemon extract (or 1 tsp each lemon and vanilla extract)
  • 3 cups all-purpose flour, spooned and leveled
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • ¾ tsp salt
  • 2 tbsp lemon juice
  • ¼ cup granulated sugar, for rolling & garnishing

Instructions

  1. In a stand mixer, cream together softened butter and granulated sugar with lemon zest until light and fluffy (about 3-4 minutes).
  2. Add one whole egg, an extra yolk, and lemon extract; mix until well combined.
  3. In a separate bowl, whisk together flour, baking soda, cornstarch, and salt. Gradually add this mixture to the wet ingredients until just combined.
  4. Pour in fresh lemon juice over the baking soda mixture; allow it to foam before mixing.
  5. Chill the dough for at least one hour; preheat your oven to 325°F (165°C) while waiting.
  6. Roll cookie balls in granulated sugar and place them on lined baking sheets.
  7. Bake for 10-12 minutes until edges are set but centers remain soft.
  8. Cool on sheets for 5 minutes before transferring to wire racks.
