  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small shallot (minced)
  • 3 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1/3 cup heavy cream
  • Fresh parsley (for garnish)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Kosher salt and black pepper (to taste)

Instructions

  1. Pat chicken thighs dry with paper towels and season with garlic powder, onion powder, paprika, salt, and black pepper.
  2. Heat olive oil in a cast iron skillet over medium heat. Add chicken skin side down and cook until crispy, about 7-8 minutes.
  3. Flip and continue cooking until the internal temperature reaches 165°F (15-25 minutes). Transfer to a plate.
  4. In the same skillet, add butter, shallots, and garlic; sauté for one minute. Stir in chicken broth, lemon juice, thyme, and red pepper flakes. Add heavy cream and simmer until slightly thickened.
  5. Return chicken to the skillet to coat in sauce before serving warm garnished with parsley.
