  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 pound ground beef or ground lamb
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ¾ cup frozen peas
  • ½ cup milk
  • 2 tablespoons butter
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Scrub and prick the potatoes; rub with olive oil and salt.
  2. Bake for 45-50 minutes until fork-tender.
  3. In a skillet, brown the ground beef or lamb over medium heat. Drain excess grease.
  4. Add onion, carrots, and garlic; sauté for about five minutes until softened.
  5. Stir in tomato paste, thyme, rosemary, salt, and pepper; add beef broth and simmer for about 10 minutes.
  6. Mix in frozen peas before removing from heat.
  7. Once potatoes are done, cut off the tops and scoop out most of the insides into a bowl.
  8. Mash the potato with milk, butter, garlic powder, salt, and pepper until smooth.
  9. Stuff the hollowed potatoes with meat filling and top with mashed potato. Bake again for 10-15 minutes until golden.
