  • 2 tbsp apple cider
  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • Pinch of flaky sea salt
  • 1/2 cup granulated sugar for crumble
  • 2 and 3/4 tsp cinnamon for crumble
  • 1/4 tsp nutmeg for crumble
  • 1/8 tsp allspice for crumble
  • 1/8 tsp ground cloves for crumble
  • 1/4 cup salted butter, melted for crumble
  • 1/4 cup light brown sugar, packed for crumble
  • 1 and 1/2 tbsp granulated sugar for crumble
  • 1/2 cup + 1 tbsp all-purpose flour for crumble
  • 3/4 tsp cinnamon for crumble
  • Pinch of salt for crumble

Instructions

  1. Start by creaming softened butter with both sugars until fluffy. Mix in vanilla extract and eggs.
  2. Gradually add dry ingredients until combined; chill dough for 30 minutes.
  3. For the filling, cook diced apples with butter, brown sugar, cinnamon, nutmeg, and cloves until tender.
  4. Prepare the salted caramel sauce by heating sugar until melted; stir in butter and cream until smooth.
  5. Scoop chilled dough onto baking sheets; bake at 365°F for about 10-12 minutes until puffed.
  6. Assemble cookies by adding apple filling on top and drizzling with salted caramel.
