  • Whole or half bone-in turkey breast (or boneless)
  • ½ cup unsalted butter, softened
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 3 cloves garlic, minced
  • 1 ½ teaspoons fresh thyme, chopped
  • 1 ½ teaspoons fresh rosemary, chopped
  • ½ teaspoon fresh sage, chopped

Instructions

  1. Prepare the turkey breast by thawing it in the refrigerator for at least 24 hours if frozen. Remove it from the fridge 20 minutes before cooking to reach room temperature.
  2. In a bowl, combine softened butter, minced garlic, salt, pepper, thyme, rosemary, and sage until smooth.
  3. Pat the turkey dry and season with salt and pepper. Loosen the skin and spread some herb butter underneath before coating the entire breast with remaining butter.
  4. Roast at 325°F (165°C) for 14–15 minutes per pound until reaching an internal temperature of 165°F (74°C).
  5. Allow the turkey to rest covered with foil for 15 minutes before carving.
