  • 2 tablespoons olive oil
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth
  • 2 tablespoons butter (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the zest and juice of the oranges, olive oil, garlic, honey, soy sauce, Dijon mustard, thyme, rosemary, salt, and pepper in a bowl.
  3. Coat the chicken in the marinade and let it sit for at least 30 minutes.
  4. Stuff the chicken cavity with quartered onion.
  5. Roast in the oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting every 20 minutes.
  6. Let it rest for 10-15 minutes before carving.
