  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese (divided)
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast until soft.
  2. Grease a 9×13-inch baking dish with butter.
  3. Peel and thinly slice the potatoes.
  4. Layer the potato slices upright in the prepared dish.
  5. In a pan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; heat without boiling.
  6. Squeeze out roasted garlic cloves and mash them into a paste; stir into the cream sauce.
  7. Pour the mixture over the potatoes and cover tightly with foil.
  8. Bake covered for about 40 minutes until potatoes soften.
  9. Remove foil and sprinkle remaining cheeses on top; return to oven uncovered for another 30 minutes until golden brown.
  10. Allow cooling slightly before serving; garnish with fresh chives.
