  • 50g active sourdough starter
  • 350g filtered water
  • 500g bread flour
  • 10g salt
  • 1 head of garlic
  • 14g olive oil
  • 3g fresh rosemary, chopped
  • 175g asiago cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Prepare garlic by cutting off the top, drizzling with olive oil, wrapping in foil, and roasting for 30-40 minutes until soft.
  2. In a mixing bowl, combine the active sourdough starter and water until dissolved. Add bread flour and salt; mix until no dry flour remains. Squeeze in roasted garlic cloves and fold in chopped rosemary.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover with a damp cloth, and let rise at room temperature for about 12 hours or until doubled in size.
  5. Deflate the risen dough, shape into a round loaf, and place seam-side up in a proofing basket. Cover with a cloth and let rise for another hour while preheating your oven to 450°F (232°C).
  6. Transfer the loaf onto a baking stone or hot Dutch oven, score if desired, and bake for 30-35 minutes until golden brown.
