  • 3 red beets with tops
  • 3 golden beets with tops
  • 6 carrots, halved lengthwise
  • olive oil
  • salt to taste
  • 3 tablespoons olive oil for dressing
  • 2 tablespoons vinegar
  • 1 tablespoon honey
  • 1 garlic clove, crushed
  • 1 teaspoon minced rosemary

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Clean and slice the beets and carrots; toss them in olive oil and salt.
  3. Spread the veggies on a baking sheet in a single layer.
  4. Roast for about 30 minutes until tender and browned.
  5. Meanwhile, whisk together dressing ingredients in a bowl.
  6. Sauté reserved beet greens in olive oil until wilted (optional).
