  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Salt and black pepper
  • 8 ounces ricotta
  • 1 bunch fresh basil (divided)
  • 1 crusty bread loaf
  • Balsamic glaze

Instructions

  1. Preheat your oven to 400°F.
  2. In a baking dish, combine cherry tomatoes with 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Roast for about 20 minutes until tomatoes burst.
  3. Blend ricotta with remaining garlic, 1 tablespoon olive oil, half of the basil leaves, salt, and pepper until smooth.
