Ingredients

Scale
  • 3 ¼ cups all-purpose flour
  • 2 ¼ teaspoons instant yeast
  • ¾ cup warm milk
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter, softened
  • 1 teaspoon salt
  • 1 large egg
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons red food coloring
  • 1 tablespoon buttermilk
  • ½ cup brown sugar, packed
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons ground cinnamon
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Activate the yeast by warming the milk to about 110°F, then combining it with yeast and sugar. Let it sit until foamy.
  2. In a mixing bowl, combine flour, sugar, salt, cocoa powder, and red food coloring. Add the yeast mixture along with softened butter, egg, and buttermilk; mix until a soft dough forms.
  3. Knead on a floured surface for about 7–8 minutes until smooth.
  4. Place in a greased bowl, cover with a towel, and let rise until doubled in size (about an hour).
  5. Prepare filling by mixing brown sugar, granulated sugar, cocoa powder, and cinnamon.
  6. Roll out dough into a rectangle, spread softened butter on top, then sprinkle with filling mixture.
  7. Roll tightly into a log and cut into twelve equal pieces.
  8. Arrange slices in a greased baking dish; cover and let rise again for about 30–40 minutes.
  9. Preheat oven to 350°F (175°C). Bake rolls for about 20–25 minutes until golden.
  10. For the glaze, whisk together powdered sugar and milk until smooth; drizzle over warm rolls before serving.
