Instructions

  1. Prepare all ingredients by juicing the lime and measuring out the other liquids.
  2. If making homemade raspberry syrup, simmer equal parts raspberries, sugar, and water until thickened, then strain and cool.
  3. Combine tequila, passionfruit juice, raspberry syrup, lime juice, and egg white (or aquafaba) in a cocktail shaker.
  4. Shake vigorously without ice for 15-20 seconds to emulsify the egg white.
  5. Add ice to the shaker and shake again for another 15-20 seconds to chill.
