  • 1 cup tomatoes

  • 1/2 cup carrots

  • Juice from 1 lemon
  • 3 cloves garlic

Instructions

  1. Cook the quinoa according to package instructions, rinsing it first to remove bitterness.
  2. Drain and rinse the canned chickpeas under cold water.
