1 pound salmon fillet (skinless)
12 oz rigatoni (or your favorite pasta)
4 cups baby spinach leaves
1/2 cup Greek yogurt
2 teaspoons dried dill (or 1 tablespoon fresh)
Zest of one lemon
Fresh lemon juice
Red pepper flakes
Instructions
Preheat your oven to 400°F. Place the salmon on a lined baking sheet, season with dill, lemon zest, salt, and pepper. Bake for 7-10 minutes until flaky.
Cook the pasta according to package instructions. Reserve about 1 cup of pasta water before draining.
Return drained pasta to the pot over low heat. Add spinach and toss until wilted.
Mix in Greek yogurt, lemon juice, and red pepper flakes. Add reserved pasta water gradually for desired sauce consistency.
