  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp ground cloves
  • ¼ tsp ground cardamom
  • ½ tsp salt
  • ½ cup canola oil
  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs
  • 1¼ cups canned pumpkin puree
  • 2 tsp vanilla extract
  • 4 oz cream cheese, room temperature
  • 4 tbsp unsalted butter, room temperature
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, whisk together flour, baking soda, cinnamon, ginger, nutmeg, cloves, cardamom, and salt.
  3. In another bowl, beat together canola oil and sugars until creamy. Add eggs one at a time and mix well. Stir in pumpkin puree and vanilla.
  4. Gradually combine dry ingredients into wet mixture using a rubber spatula until just mixed.
  5. Pour batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. For frosting: Beat cream cheese and butter until smooth; then gradually add powdered sugar and adjust with milk to desired consistency.
  7. Once cooled completely, spread frosting on top and enjoy!
