1 tsp baking soda
2 tsp ground cinnamon
1 tsp ground ginger
½ tsp ground nutmeg
½ tsp ground cloves
¼ tsp ground cardamom
½ tsp salt
½ cup canola oil
¾ cup granulated sugar
½ cup light brown sugar
2 large eggs
1¼ cups canned pumpkin puree
2 tsp vanilla extract
4 oz cream cheese, room temperature
4 tbsp unsalted butter, room temperature
1 cup powdered sugar
1–3 tsp milk, as needed
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a mixing bowl, whisk together flour, baking soda, cinnamon, ginger, nutmeg, cloves, cardamom, and salt.
In another bowl, beat together canola oil and sugars until creamy. Add eggs one at a time and mix well. Stir in pumpkin puree and vanilla.
Gradually combine dry ingredients into wet mixture using a rubber spatula until just mixed.
Pour batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
For frosting: Beat cream cheese and butter until smooth; then gradually add powdered sugar and adjust with milk to desired consistency.
Once cooled completely, spread frosting on top and enjoy!
