  • 12 Tablespoons olive oil
  • 1 cup sun-dried tomatoes
  • 5 cloves garlic (minced)
  • 68 sage leaves
  • 1½ cups pumpkin puree
  • 2 cups low sodium chicken broth (or vegetable broth)
  • 1 teaspoon dried basil
  • ½ teaspoon ground cinnamon
  • 1 lb lean ground beef (or ground turkey, chicken or lentils)
  • 1 medium onion (diced small)
  • 2 big carrots or 12-15 baby carrots (diced small)
  • 3 celery stalks (diced small)
  • ⅓ cup dry white wine
  • 1 cup crushed tomatoes (no salt added preferred)
  • 1 cup milk of choice
  • Ground black pepper (to taste)
  • 1 lb pasta
  • Parmesan cheese (for garnish)

Instructions

  1. 1. Heat olive oil in a medium pot over low to medium heat. Add sun-dried tomatoes, garlic, and sage; sauté until fragrant.
  2. 2. Stir in pumpkin puree, broth, basil, and cinnamon. Simmer for 15 minutes.
  3. 3. In a large pot, brown the ground meat; drain excess liquid.
  4. 4. Sauté diced onions, carrots, and celery in the same pot until soft.
  5. 5. Deglaze with white wine and scrape any browned bits from the bottom of the pot.
  6. 6. Blend pumpkin mixture until smooth; add back to the pot with meat and vegetables.
  7. 7. Stir in milk; season with black pepper and simmer for 30 to 60 minutes until thickened.
  8. 8. Cook pasta according to package instructions; serve topped with sauce and garnished with Parmesan.
