  • 4 scallions (3 for the sauce, 1 for poaching)

  • 1/2 cup reserved chicken cooking water

  3. Turn off heat and let sit, covered, for an additional 15 minutes.
  4. Prepare an ice bath and cool the chicken for about five minutes before shredding onto a plate.
  5. In a saucepan over medium-low heat, cook chopped scallion whites until crisp.
  6. In remaining oil, mix soy sauce, sugar, and reserved cooking water; bring to a boil before adding minced ginger and scallion greens.
  7. Taste for seasoning; pour over shredded chicken before serving.
