  • 1 1/2 cups shredded unsweetened coconut flakes
  • 1 1/2 cups skinned pistachio nuts
  • 1/2 cup granulated sugar
  • 1 1/2 tbsp cornstarch
  • 1 1/2 tsp rosewater
  • 1 egg
  • 1 egg white
  • Pinch salt
  • 9 oz dark chocolate (for dipping)

Instructions

  1. Preheat oven to 325°F (163°C). Soak dried coconut flakes if using.
  2. Process pistachios into fine crumbs; combine with coconut, sugar, cornstarch, rosewater, beaten egg and egg white, and salt.
  3. Shape tablespoonfuls of the mixture onto a lined baking sheet.
  4. Bake for 25-30 minutes until lightly golden brown; let cool on the sheet.
  5. Melt dark chocolate and dip cooled macaroons; place back on the baking sheet to set.
