  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/4 cup green onions, sliced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, grated

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown (6-7 minutes). Remove and set aside.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until softened (3-4 minutes).
  3. Stir in pineapple and cook for another 2 minutes.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil; then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender.
  5. Return cooked chicken to the skillet, mixing gently to combine. Heat through for 1 minute.
  6. Serve garnished with green onions and sesame seeds.
