Scale
  • 1 ½ tbsp Avocado Oil
  • 2 ½ lb Beef Tenderloins
  • 1 tsp Salt
  • ½ tsp Pepper
  • ¼ cup Yellow Onion (thinly sliced)
  • 1 tsp Fresh Rosemary (minced)
  • ⅓ cup Brown Sugar
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Dijon Mustard
  • 3 Large Peaches (pitted, peeled, and diced)

Instructions

  1. Preheat your oven to 375°F.
  2. Heat avocado oil in an oven-safe skillet over high heat. Season beef tenderloins with salt and pepper, then sear for about 3-4 minutes on each side until golden brown.
  3. Remove beef from skillet; reduce heat to medium-low and sauté onions and rosemary until lightly golden.
  4. Add brown sugar, apple cider vinegar, dijon mustard, and diced peaches to the skillet. Stir until combined and fragrant.
  5. Return the beef to the skillet, coating it with the peach glaze. Bake in the oven for about 10 minutes until the internal temperature reaches 145°F.
  6. Let rest for 5-10 minutes before slicing and serving with the glaze on top.
