  • 500 g chicken (with bones)
  • 1 cup yogurt
  • 2 cups spinach
  • 1 tsp garam masala powder
  • 1 tbsp crushed brown onion
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1020 black pepper
  • 1/2 tsp cumin seeds
  • 3" cinnamon sticks
  • 78 green cardamom
  • 300 ml water
  • 1 tsp ginger garlic (grated)
  • Julienne ginger for garnish

Instructions

  1. Marinate the chicken with yogurt, garam masala, cumin powder, and salt for at least 1 hour.
  2. Heat oil in a heavy-bottomed pan and add whole garam masala. Sauté ginger garlic paste until fragrant.
  3. Stir in red chili powder, turmeric, and coriander powder before adding marinated chicken. Cook on high until the chicken changes color.
  4. Add water and simmer covered for about 20 minutes.
  5. Meanwhile, wash and slice spinach into ribbons.
  6. Add spinach to the curry and cook until wilted; cover again and simmer for another 20 minutes.
  7. Garnish with julienne ginger before serving hot with naan or rice.
