  • 1 whole chilled duck
  • Sea salt (if needed)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon cracked black pepper
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • ½ cup orange juice
  • 2 tablespoons fig jam
  • 2 tablespoons maple syrup
  • 1 tablespoon soy sauce or coconut amino acids
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon corn starch

Instructions

  1. Prepare the duck: Rinse under cool water, pat dry, and score the skin lightly.
  2. Season: Mix sea salt (if needed), garlic powder, oregano, thyme, and cracked pepper. Rub all over the duck.
  3. Roast: Preheat oven to 375°F (190°C). Place duck breast-side up on a roasting rack in a pan and roast for about 90 minutes until golden brown and crispy.
  4. Make the glaze: Combine orange juice, fig jam, maple syrup, soy sauce (or coconut aminos), balsamic vinegar, and cornstarch in a saucepan over medium heat until thickened.
  5. Glaze & rest: Brush the duck with glaze and let it rest for 10-15 minutes before carving.
