  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 1 tablespoon unsalted butter
  • 1 teaspoon sugar
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 1 cup uncooked white rice (long grain or jasmine)
  • 2 cups beef broth
  • Fresh chopped parsley, for garnish

Instructions

  1. In a large skillet, heat olive oil and butter over medium heat. Add thinly sliced onions with salt and sugar. Cook for 20-25 minutes until caramelized.
  2. Push onions to one side and add chicken seasoned with salt, pepper, thyme, and oregano. Sear until golden brown (2-3 minutes per side). Stir in minced garlic.
  3. Sprinkle uncooked rice over the chicken and onions. Pour beef broth gently and bring to a boil.
  4. Reduce heat, cover, and simmer for 18-22 minutes until rice is tender.
  5. Optional: Sprinkle cheese on top after removing from heat; let sit for 5 minutes before serving.
