  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey
  • 8 oz grape tomatoes
  • 8 oz fresh mozzarella balls
  • 2 Tbsp avocado oil
  • Fresh basil
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • Kosher salt and fresh black pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, whisk together balsamic vinegar, honey, avocado oil, minced garlic, Italian seasoning, salt, and pepper.
  3. In another bowl, combine halved tomatoes, mozzarella balls, chopped basil, salt, and pepper.
  4. Heat avocado oil in an oven-safe skillet over medium-high heat. Season chicken with salt and pepper; sear for 1-2 minutes on each side until golden brown.
  5. Pour the balsamic marinade over the chicken and top with the tomato-mozzarella mixture.
  6. Bake uncovered for 18-23 minutes or until chicken reaches an internal temperature of 165°F.
  7. Let rest for five minutes before serving.
