  • 7 oz (200g) mushrooms, sliced
  • 3 oz (80g) mozzarella cheese, sliced
  • 2 cups fresh baby spinach
  • 2 cloves garlic, minced
  • 2 tbsp unsalted butter
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place chicken breasts between plastic wrap and pound to about 1/2 inch thick.
  3. In a skillet over medium heat, melt butter and sauté mushrooms until browned (about 5 minutes). Add garlic and thyme; cook for an additional minute. Stir in spinach until wilted.
