  • 8 oz egg noodle pasta
  • 1.5 lbs cremini mushrooms
  • 1 onion
  • 3 cloves garlic
  • 1/2 cup dry white grape juice
  • 1.5 cups mushroom stock
  • 1/2 cup sour cream (or Greek yogurt)
  • Fresh thyme
  • Smoked paprika
  • 3 Tablespoons butter (divided)
  • 2 Tablespoons flour
  • 23 sprigs thyme
  • 2 teaspoons dijon mustard
  • Chopped fresh parsley or chives
  • Sea salt & black pepper

Instructions

  1. Cook egg noodles according to package directions; drain and toss with butter, salt, and pepper.
  2. In a skillet, melt butter and sauté halved cremini mushrooms until browned; set aside.
  3. In the same skillet, add more butter, then cook sliced onions and crushed garlic until tender.
  4. Deglaze with grape juice, scraping up bits from the skillet.
  5. Mix flour into mushroom stock; pour into skillet with reserved mushrooms, thyme sprigs, dijon mustard, and smoked paprika. Simmer.
  6. Temper sour cream with some sauce before stirring it back into the skillet.
  7. Season the stroganoff sauce with salt and pepper; serve over noodles.
