  • 1 lb boneless skinless chicken breast
  • 2 cups mushrooms (cut in half)
  • 1 clove garlic (minced)
  • 1 ½ cups dry white grape juice
  • ½ cup heavy cream
  • ⅓ cup shredded asiago cheese
  • Fresh thyme

Instructions

  1. Pound the chicken breast to an even thickness and cut into serving-sized pieces.
  2. In a skillet, melt butter with olive oil over medium heat. Dredge chicken in seasoned flour and sauté until golden brown on both sides, then remove from the skillet.
  3. Add remaining olive oil to the skillet and sauté mushrooms with garlic until browned.
  4. Deglaze the skillet with grape juice, scraping up brown bits, and add bruised thyme sprigs.
  5. Return chicken to the skillet, bring to a boil, cover, and simmer for 15-20 minutes.
  6. Remove chicken again; stir in heavy cream and asiago cheese until melty and thickened.
  7. Return chicken to sauce until heated through and serve.
