  • 9 lasagna noodles
  • 1 pound mushrooms (cremini or button), sliced
  • 2 cups ricotta cheese
  • 3 cups marinara sauce
  • 2 cups fresh spinach leaves, chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • Olive oil, salt, and pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook the lasagna noodles in salted boiling water until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent; add garlic and cook for another minute.
  4. Add sliced mushrooms, thyme, salt, and pepper; cook until mushrooms are tender. Stir in spinach until wilted.
  5. Layer half of the marinara sauce in the baking dish, followed by three noodles, half of the ricotta, mushroom mixture, and a third of mozzarella and Parmesan cheeses.
  6. Repeat the layers ending with marinara sauce on top. Bake covered for 25 minutes; uncover and bake for an additional 10–15 minutes until golden.
