  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/2 cup all-purpose flour (for the cookie layer)
  • 1 teaspoon cornstarch (for the cookie layer)
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon salt (for the cookie layer)
  • 1/4 cup unsalted butter (room temperature, for the cookie layer)
  • 1/3 cup brown sugar (packed light or dark, for the cookie layer)
  • 1/8 cup white granulated sugar (for the cookie layer)
  • 1/4 cup peanut butter (creamy, for the cookie layer)
  • 1 teaspoon pure vanilla extract (for the cookie layer)
  • 1 large egg (room temperature, for the cookie layer)
  • 1/2 cup quick oats
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini M&Ms

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, combine sugar, eggs, egg yolk, melted butter, oil, and vanilla until mixed.
  2. In another bowl, sift together flour, cocoa powder, cornstarch, and salt. Gradually mix into the wet ingredients until just combined.
  3. Fold in semi-sweet and milk chocolate chips.
  4. Prepare the cookie layer by mixing flour, cornstarch, baking soda, baking powder, and salt in one bowl. In another bowl, cream together butter with brown sugar and white sugar until fluffy. Mix in peanut butter, vanilla, and egg until smooth.
  5. Layer half of the brownie batter in a greased pan. Add dollops of cookie dough then top with remaining brownie batter.
  6. Bake for about 40 minutes or until a toothpick comes out clean yet moist. Let cool before slicing.
