Ingredients

  • 1 to 1.5 pounds of ground beef or turkey
  • 3/4 cup diced red onion
  • 1/2 cup diced celery
  • 2 eggs
  • 1/4 cup soy sauce (or Tamari)
  • 1/3 cup ketchup
  • 1 tablespoon dried oregano
  • 1 tablespoon chopped parsley
  • 2 teaspoons garlic powder
  • 1 cup quick oats
  • 1/4 cup light brown sugar
  • 3 tablespoons stone ground mustard
  • 1/2 teaspoon paprika
  • 1/2 teaspoon pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine all meatloaf ingredients and mix until well incorporated.
  3. Shape the mixture into a loaf and place it in a nonstick mini loaf pan or round Pyrex dish.
  4. In a separate bowl, mix topping ingredients together and brush over the meatloaf.
  5. Bake for about 75-85 minutes until the internal temperature reaches 160°F.
