  • 1 cup fruitcake fruit blend or your choice of dried fruit
  • 1/2 cup candied mixed peel
  • 1 large egg
  • 1 cup buttermilk or plain yogurt
  • 3/8 cup melted butter, divided into 6 tablespoons and 2 tablespoons
  • Non-melting sugar or powdered sugar for dusting

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, spice mix, and sugar.
  3. In another bowl, beat the egg and mix in the buttermilk and melted butter.
  4. Combine the wet ingredients with the dry ingredients until just mixed; fold in dried fruits and candied peel.
  5. Scoop batter into greased muffin tins and bake for about 20 minutes until golden brown.
  6. Let cool slightly before dusting with powdered sugar.
