  • 1 pack of thick-cut chicken bacon
  • 1/4 cup brown sugar
  • 1/2 tablespoon water
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 baguette
  • olive oil
  • salt and pepper
  • 4 or 8-ounce log of goat cheese
  • maple syrup (or honey)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine brown sugar, water, black pepper, cayenne pepper, and optional red pepper flakes. Coat each piece of chicken bacon in this mixture and lay them on the baking sheet.
  3. Bake for about 30 minutes until crispy and golden brown. Let cool slightly before chopping into small pieces.
  4. Slice the baguette into rounds, brush with olive oil, season with salt and pepper, then toast in the oven until golden brown (about 10 minutes).
  5. Mix crumbled goat cheese with half of the chopped chicken bacon. Shape into a log on a serving plate. Drizzle maple syrup over the top and sprinkle remaining bacon bits around it.
  6. Serve with toasted crostini for spreading.
