  • 1 cup uncooked long grain white rice
  • 1 teaspoon minced garlic
  • ½ cup chopped onion
  • 1 cup chicken broth
  • 1.5 lbs chicken breasts (cut into 1 inch cubes)
  • 1 cup black beans (cooked, rinsed & drained)
  • 1 cup frozen corn (defrosted)
  • 16 oz jarred salsa
  • ½ teaspoon chili powder
  • ½ teaspoon paprika
  • 1 cup cheddar cheese

Instructions

  1. Preheat your oven to 350°F.
  2. In a large casserole dish, layer uncooked rice, minced garlic, and chopped onion. Pour in the chicken broth and stir until combined.
